Creamy Avocado Sauce Pasta Recipe

I may have mentioned it once or two thousand times, but my mom’s yard has two awesome avocado trees (awesomecado trees?). Recently she sent me home with a ton and I ate some, froze some and gave some away.

But, I still had a lot left so I was lucky when Sheila from Striding Mom mentioned an Avocado Pasta Recipe to me last week. She gave me a rough draft and I used that as the basic idea for dinner the other night.

Creamy Avocado Sauce Recipe

This sauce recipe is vegan and gluten free. (Choose the pasta based on your needs.)

Ingredients:

  • 1 cup avocado (I had very ripe chunks that I measured)
  • 1 Tb. olive oil
  • 1 Tb. minced garlic
  • 1 Tb. lemon juice and zest from that lemon
  • 8 basil leaves
  • 2 Tb. unsweetened milk substitute (add as needed to desired consistency)
  • Salt and Pepper to taste (I think more is betta)

Place in food processor, or blender if you have no idea when exactly you lost/broke your food processor.

Blend without milk sub and add as needed to desired consistency. Mine was very thick at first and wouldn’t blend until I added 1 Tb. milk.

Serve over hot pasta. I think it’s best at room temperature, but store the rest in the fridge. This would be a great dish for a summer BBQ because it’s super creamy, but not mayo-based so you don’t have to worry about it going bad quickly.

I’d have a watermelon tree… but I’d never lay under it.

    I need to eat gluten free and the other day I was making my husband spaghetti and red sauce and had a serious craving for some pasta (GF of course), this would be perfect to try! I am not a sauce person but I am for sure an avocado person! Thanks for the recipe!

    That avocado sauce would be so perfect around Halloween! The color is perfect! Or, anytime, really.

    I would have a money tree. Does that count? The amount of fabulous running gear out there is way out of proportion with the amount of money I have.

    If money tree is not acceptable, I choose banana tree!

    I would want a guava tree. A semester in Tanzania with a guava tree in our yard spoiled me. I’ve never been able to find guavas that measured up to ones plucked fresh from a tree.

    SPEECHLESS from my jealousy of your avocado tree. Can I have all the trees the grow fruit in my possession so I never have to buy them again? Regardless of the fact that I live in a city and have no lawn. Whatever. They’ll be magic trees that don’t need soil. So there!

    I am really all about the peaches in the summer and would totes enjoy a peach tree. On a side note, I just started liking avocados (I know…) so I neeeeed to make this recipe! Thanks for sharing!

    Do avocadoes freeze well? I had no idea you could freeze them, but I guess you can freeze guacamole though… hmmmm… I’m so intrigued. :)

    I want an avocado tree!! I could eat them every day!! They are so expensive here in KS and half the time when I cut into them they are bad – not cool!!!

    This looks so good… I bought two avocados today to make it later this week! I’d love to have a white peach tree, which is apparently native to Massachusetts, where I live, but if I could have a magic tree that didn’t need the right conditions I’d love a coconut tree!

    How many calories in a serving? And about how much in a serving? I over do it with anything avocado. Don’t want to go crazy!

    I would want a pineapple tree. And I would like for the pineapple to not be so full of sugar, but still taste amazing. Oh, and I wouldn’t mind if they would occasionally turn themselves into pineapple juice either ;)

    I make raw sauces like this all the time and pour it over raw spiralized zucchini noodles! I just want a fruit farm

    I am planning to start a Whole30 in a couple of weeks, so I’ve been one the lookout for some good recipes with avocado lately. This looks like it would be really tasty on top of some poached eggs, or a piece of fish! Yum – thanks :)

    I would like a peach tree so that I wouldn’t go and buy them and have them turn to mush or attacked by fruit flies by the time I eat them all. Plus, I could makes lotsa peach pies. And Cobbler.

    I need a blackberry bush, too. I really don’t want to take a bowl with me on my runs to have to pick them.

    Made this for dinner tonight, atop home-made wholemeal fettucine (I even milled the flour myself!) – it was so amazingly delicious, the lemon really sets it off. Thankyou!
