Chocolate Chip Oatmeal Cookie for One

Dessert

8 May

How’s it going? I just wanted to stop in really quick to say hello and share an update to my favorite oatmeal cookie recipe.

easy chocolate chip oatmeal cookie recipe

I have to confess, every time I make a ‘real’ batch of cookies I end up eating 6 cookies worth of batter and way way waaaaaaaayyy too many fresh cookies out of the oven. Finally the cookie police busted in my door one day and stopped me.

So, now I am forced to make mini-batches to keep myself out of cookie prison. It’s for the best. You can double this recipe if you want more than two cookies and it’s still a lot less calorie damage than a whole batch!

My OG oatmeal cookie for breakfast recipe is super easy and HEALTHY! But I added chocolate chips this time so it’s not exactly the ideal breakfast with that addition – but it’s so much better Winking smile

Oatmeal Chocolate Chip Cookie for one

  • 1 packet maple brown sugar oatmeal
  • 1 Tb. nut butter
  • 2 Tb egg whites or 1 egg
  • dash: salt, baking soda
  • 2 Tb. Chocolate chips

Directions: Heat oven to 350 degrees. Smash all ingredients – in a bowl, not your mouth. Make 2 or 3 cookies and drop on sprayed cookie sheet, press down a bit. Bake for 8 to 10 minutes or until set.

Enjoy!

Chocolate chips in cookies. M&Ms if I’m just eating the chocolate 🙂

My husband and I are constantly wanting to make small batch cookies/cakes/desserts because, like you, the more we make the more we eat! It’s like, if it’s there, it’s calling my name. If it’s not there, I’m good. #selfcontrolissues
Thanks so much for posting this! We’ll be sure to try it out!

I love oatmeal cookies. My MIL makes them with coconut and dark choc. They are so good. Also, Not trying to be the Gluten Police but unless labeled *most* Instant oats contain trace amounts of Gluten.

And that’s why I don’t bake! My problem is that my husband does, and who can resist the question, “Do you want to make some brownies?” And this is also why I married him

Guilty of doing the same – sampling the batter, licking the bowl, taste testing a couple…I’ve already eaten half a recipe by teatime!

I love chocolate chips better. I could do without the crunch from the candy shell on the M&Ms

      Chocolate chips.

I pretty much always have too much cookie dough and then one cookie per tray of cookies that I bake…it’s quality control…and delicious!

I could use one if those babies right now! I agree about the baking, I can’t be trusted with cookie dough. I’ll eat 10 if I can 🙂
