Twice Baked Potatoes with Hummus Recipe

Hello  it’s Meatless Monday!! And if you want a delicious, super easy and healthy meal to enjoy before you hit the town red green – I have one for ya! These twice baked potatoes are super delicious and creamy (plus vegan and gluten free).

I’ve had this idea for a while but haven’t been able to make it because I always end up eating all my hummus before I get the chance to cook with it. Thankfully Sabra hooked me up with enough that I had a little to spare for this recipe.

Twice Baked Potatoes with Hummus

{vegan. gluten free. potato filled.}

Ingredients:

  • 2 large baking potatoes
  • 3/4 cup hummus
  • salt & pepper, garlic
  • 1 cup kidney beans (drained & rinsed)

Directions:

Wash, pierce and bake potatoes at 375 for 1 hour or until cooked through. [Or bake them in the crockpot – directions here]

Allow to cool a bit so you can handle them.

Twice Baked Potatoes with Sabra Hummus Recipe

Carefully cut potatoes in half and scoop out inside leaving some potato on the skin so they don’t fall apart. Place the potato guts (that’s an official term) into a bowl. Mash with hummus, season with salt & pepper to taste.

I used roasted red pepper – use your favorite! I also think the rosemary one would be delicious.

Tip: I made sure to use the super tasty middle part of the container. It has tons of flavor!

Stir in beans. Scoop filling back into potatoes and reheat.

    I always have at least one St Patrick’s Day shirt that of course can only be worn on that day because it doesn’t make sense any other day. This year it is a giant glittery shamrock and I wore it to work because it had to be done. Good thing I am sequestered away in a corner away from the public (also so I can comment on this post).

    My Irish themed snack is a ton of kabocha squash so I have the green and orange down.

    I’m definitely obsessed with hummus! You are so lucky to visited the Sabra facility. I’m eating tee tea pistachio muffin this morning that I baked this weekend. I wore all green to the gym this morning!

    this sounds like a great recipe but I’d probably have to buy extra hummus, like you mentioned it gets eaten rather quickly.

    I forgot to wear green today #fail
    I almost put spoiled milk in my coffee until a coworker saved me at the last minute so i saved myself from feeling green.

    I’m sure there will be some sort of salad with lunch today so that’ll be green but I am craving something sweet so I might very well hit up the bakery for a cupcake with green icing.

    Sabra hummus is my fave!! Roasted Pine nut is my go-to flavor. These potatoes look great! Can I smother them with cheese?

    LOVE those twice baked potatoes. I can’t wait to make them.
    I am definitely wearing green today. My shirt is actually quite obnoxiously green. I already ate a zucchini muffin for breakfast for my greens. Looking forward to some green barley later!

    I’ve been on the computer since I got up this morning so no green on yet, but I promise to get it on here shortly!

    I work tonight so hopefully that won’t make it crazy. I am thinking maybe a big salad is in order since it is St Patrick’s Day 🙂
