Sweet Omelet with Chocolate Chips Recipe

Yesterday I tweeted that Chocolate Chips make EVERYTHING better.

Sweet Omelet Chocolate Chips Recipe

Ingredients:

  • 1/2 cup egg whites OR 3 egg whites
  • 1 Tb. greek yogurt (vanilla or plain)
  • 1 tsp sugar or stevia
  • 1/8 tsp vanilla extract
  • dash of salt
  • Chocolate chips – I think mini are best for this recipe
  • nut butter
  • optional: Banana or other delicious fruit

Directions: Whisk eggs, yogurt, sugar, vanilla extract and salt thoroughly. The greek yogurt makes this fluffier but whisk until it’s frothy. IMG 1551 1024x683 thumb Sweet Omelet with Chocolate Chips Recipe

Place egg mixture in a small, HOT skillet. Cook first side. Flip when it’s almost done like you’re making a ‘normal’ omelet. IMG 1554 1024x683 thumb Sweet Omelet with Chocolate Chips Recipe

Once it is flipped, turn heat to low or off but keep in pan. Spread nut butter inside and sprinkle with chocolate chips. Fold over so it can melt into happiness. IMG 1557 1024x683 thumb Sweet Omelet with Chocolate Chips Recipe

If you don’t get too crazy with the chocolate and PB – this is actually a pretty healthy dish!

I wish I liked eggs. That looks so good but I just can’t get over the taste or texture of them. BLEH. My tastebuds are broken.

I can get behind that omelette. Breakfast is my favorite meal of the day and eggs and chocolate are my two favorite foods.

Re: Poison, I used to have a dance routine to that song when it first came out. I was 10. That seems wrong.

Random q: do you know anything about the Nike San Fran marathon of 1/2 for this coming October? I want to make sure I don’t miss registration but I can’t find anything about it online.

NWM 26.2 Facebook page keeps saying that information is coming soon. They haven’t released dates for the lottery or the run. I signed up with Team in Training and the date is October 20th. Shhh :)

I would absolutely eat that omelette. Chocolate totally makes everything better…and everything is better of course with peanut butter. Except maybe pizza. I don’t think I could put peanut butter on a regular slice of pizza…although I would try it I guess if someone asked me to!

I don’t do omelets. I don’t do things in my eggs, and usually just call omelets fancy scrambled eggs. But I almost licked my phone this looked so good! And life is always better with exclamation points (!!!) and clean underwear ;)
