Sweet Omelet Chocolate Chips Recipe

Ingredients:

  • 1/2 cup egg whites OR 3 egg whites
  • 1 Tb. greek yogurt (vanilla or plain)
  • 1 tsp sugar or stevia
  • 1/8 tsp vanilla extract
  • dash of salt
  • Chocolate chips – I think mini are best for this recipe
  • nut butter
  • optional: Banana or other delicious fruit

Directions: Whisk eggs, yogurt, sugar, vanilla extract and salt thoroughly. The greek yogurt makes this fluffier but whisk until it’s frothy.

Place egg mixture in a small, HOT skillet. Cook first side. Flip when it’s almost done like you’re making a ‘normal’ omelet.

Once it is flipped, turn heat to low or off but keep in pan. Spread nut butter inside and sprinkle with chocolate chips. Fold over so it can melt into happiness.

If you don’t get too crazy with the chocolate and PB – this is actually a pretty healthy dish!

It is under 250 calories for this plate of deliciousness and packed with protein and healthy fats.

How did you make it yellow with egg whites? Or are those your trusty-Kirkland-egg-substitutes?

    It looks super-yum!

    Everything is better with Nutella.

  2. says

Quix in a healthy mood: hummus! Quix not in a healthy mood: vodka!

I wish I liked eggs. That looks so good but I just can’t get over the taste or texture of them. BLEH. My tastebuds are broken.

  3. Robin says

I can get behind that omelette. Breakfast is my favorite meal of the day and eggs and chocolate are my two favorite foods.

Re: Poison, I used to have a dance routine to that song when it first came out. I was 10. That seems wrong.

Random q: do you know anything about the Nike San Fran marathon of 1/2 for this coming October? I want to make sure I don’t miss registration but I can’t find anything about it online.

    • Tracy Mahaffey says

NWM 26.2 Facebook page keeps saying that information is coming soon. They haven’t released dates for the lottery or the run. I signed up with Team in Training and the date is October 20th. Shhh :)

    Hey Monica-

I absolutely love your cooking creativity! I’m going to try making this omelette it actually sounds delicious! For me everything is better with cheese! Any kind :)

  5. says

I would absolutely eat that omelette. Chocolate totally makes everything better…and everything is better of course with peanut butter. Except maybe pizza. I don’t think I could put peanut butter on a regular slice of pizza…although I would try it I guess if someone asked me to!

  6. Gillian says

Looks like a crepe or something. Yummy! I’d say everything is better with crushed red pepper. I like it HOT!

  7. says

I don’t do omelets. I don’t do things in my eggs, and usually just call omelets fancy scrambled eggs. But I almost licked my phone this looked so good! And life is always better with exclamation points (!!!) and clean underwear ;)

  8. says

Everything is better with diamonds! (just sayin’) :)

I would also say everything is better with my dogs…or at least they can make everything better.

  9. says

Sriracha! I put it on (almost) everything :P

And your sweet omelet looks delicious! Like a gluten free crepe, or something. You could probably fill it with Nutella…

  10. run4fun says

Monica, where did you get that dress? Love it. I have a similar body type to you, and I’m always on the look out for something cute and flattering.

  11. says

I like eggs, I like chocolate, but somehow I still can’t quite wrap my head around this omelet. Now a crepe with some chocolate chips…. yum yum. =)

  12. Karin says

Ketchup. It is my favorite food. Peanut Butter is a close second. I’m thinking to add the chocolate chips to my pancake with pb…yum

  13. says

Everything IS better with chocolate! You just settled it.

That. Is. Amazing. And now I am sad that I am having a smoothie for breakfast right now… sigh…

  14. says

In this order, everything is better with:
    1. Hot sauce. Especially sriracha! 2. Chocolate. 3. Booze.

Well, okay. The order depends on the day.

That omelette scares me but also intrigues me…

  15. says

    Cheese! and Hot sauce!

In face, I think I may just make a meal out of cheese dipped in hot sause. … I guess that’s basically like eating queso dip.
