I couldn’t stand the look of my nails for one more second so I made a quick trip to the salon during lunch today. Then, I stopped for a Sonic Sparkling Water. I am obsessed.

Yesterday after I was done making the 7 layer dip I wanted something sweet. I have a massive jar of Nutella from a Christmas present and instead of just sticking a spoon in the jar for the 26th time I decided to bake something with it.

I made up this super easy and delicious treat as I went along and it turned out great! They’re not super sweet, almost darker chocolate-ish.

Tip: Spray the measuring cup with non-stick and the Nutella slides out easier.

Nutella Cookies Recipe

Easy. Gluten Free. Delicious.

Ingredients:

  • 3/4 cup Nutella
  • 1 cup flour (I blended gluten free oats into flour)
  • 1 egg
  • *optional add-ins: (1/2 tsp) salt, instant coffee grounds, vanilla extract

Directions: If you don’t have flour blend oats into flour in a food processor or blender. Mix all ingredients. Place in fridge for 10 minutes if batter is too runny. Drop by the spoonful on sprayed baking sheet. Bake at 350 degrees for 10-14 minutes or until set. I made a batch with all of those add-ins and one with only salt and they both worked.

    This post reminded me that I miss your quest for the perfect chocolate chip cookie. I want to take on that journey, but I can’t eat all those calories… That’s the secret I want someone to unlock – calorie free cookies!

      I think there’s a cartoon about calorie free pizza this reminded me of! I’m still on the search for the BEST chocolate chip cookie, still haven’t found it… I need some help on that please :)

    YAY YAY YAY! I luuuuuuuuuuuuuurve Nutella!

    So much so that we can’t keep it in the house. :\ However, I’m always looking for a great new recipe, and it’s Harry’s turn to take cookies to work for his co-workers this Thursday. Boy howdy, does that give me an excuse to get a jar of happy at the store! :D

    Often times when I treat myself to a chocolate chip cookie, I think of you. I even told the hubs about this blogger who’s searching the best cookie ever. I’m kind of doing the same thing, but not very actively. In France, where I used to live, people are crazy about Nutella. I can’t have it – lactose.

    Yum, those look great! Another REALLY simple and gluten free (but not quite as healthy) nutella recipe is meringues! You just whip 3 egg whites with 10 tbsp sugar and 3 tsp corn flour until really stiff, melt some nutella and then fold it though! You bake them at 300 F for about 20 minutes, and then just turn off the oven and leave them for another 2 hours or so. They’re super light, fluffy, and delicious!

    Stopping by to say hi! Love your blog. I’m excited about nutella cookies! Seems easy I def have to try it. I love nutella and it’s been too long since I had any! Ate the crap out of it when I visited Germany :)

    Ok now I might start a riot in my house, but I have to make these for my husband. He is Italian and Italians grow up on this stuff so he is naturally crazy about it. He will never forgive me if he finds out I know that this recipe exists and I didn’t make it. LOL!

    I was hoping you would post the recipe for these cookies!! I’m addicted to Nutella; whether it’s eating it with a spoon, eating it over ice cream, eating it on smores, or eating it with Teddy Grahams. It’s soooooo good!!!

    Well, since I don’t like chocolate, I don’t like Nutella. However, don’t fret, I’m not “demon free” I love TJ’s Cookie Butter…yum-o.
